
An easy-to-make meal when your fish is not smoked - but you wish it was.

Ingredients
Bacon, 8 medium slices
Garlic, 6 cloves
1 Orange Bell Pepper
1 large Onion
1 Tbsp Olive Oil
1 1/2 pounds fresh Cod (or similar white fish)
1 Tbsp smoked paprika (or more)
1 Tbsp black pepper
Directions
Cook 8 bacon strips over medium heat in a non-stick frying pan.
While bacon is cooking, chop garlic, bell pepper, and onion.
Remove bacon from pan when about half done; leave drippings in pan, and sautée chopped vegetables in bacon drippings. Add olive oil if necessary to provide enough fat. While veggies are cooking, chop cod and bacon into 2 inch pieces.
After 5 minutes, add cod and bacon, smoked paprika, and black pepper (You MUST use SMOKED Paprika, not standard paprika. It's expensive, but definitely a spice you should have in your repetoire. A little goes a long way.)
Mix and cover. Cook 15 minutes more, mixing once.
